Lunch Idea — Kale and Edamame Salad

This was my attempt to replicate one of those pre-packaged salads from Trader Joe’s.  It was easy, hearty, healthy, and delicious.  A good lunchbox alternative to PB&J.

Kale and Edamame Salad

Ingredients:

  • kale (I bought a bag of pre-washed, pre-cut kale at Trader Joe’s.  You can also buy bulk pre-cut kale at Whole Foods)
  • grape tomatoes
  • edamame
  • dried cranberries
  • sliced almonds
  • olive oil
  • lemon juice
  • salt and pepper

Instructions:

1) If you bought frozen edamame, defrost it.

2) Combine the salad ingredients (kale, tomatoes, edamame, cranberries, almonds)

3) Make the dressing.  Combine olive oil and lemon juice (I like citrus-y dressing, so I combine almost half and half.) and salt and pepper.  You can put the dressing in a separate container and add at lunchtime, or you can add when you make the salad.  The kale is hearty and won’t wilt like regular lettuce does when you dress it early.
