I get this question within nanoseconds of walking in the door after work. I love to cook and eat, but as a working mom, I don’t have a lot of time.
Over the years, I’ve tried to master the art of simplifying interesting recipes so I can make them into weeknight meals. If there’s a way to make that recipe calling for three pans into a one-pot dish, I’ve probably figured it out. The recipe that calls for browning spices in two steps? Could probably be done all at once without sacrificing the quality of the dish. Ergo, the Good Enough Gourmet.
