Easiest Dinner Ever = Ground Meat and Greens over Rice

This is the easiest dinner ever, and versatile. Luckily, my husband loves it and requests it on repeat.

This dish is literally onion, ground meat (of your choice), and greens (of your choice) over rice (of your choice).

Ground meat: I usually use ground beef because I don’t season this dish much and beef has more flavor than other meats. I’ve also made it with ground chicken.

Onion: I don’t get fancy with the onion, like using leeks or shallots. It’s just an onion.

Greens: My default is spinach, but I use whatever greens I have. I’ve used chard, kale, and both fresh and frozen spinach. I used dandelion greens in the picture above.

Rice: I’ve used every type of rice, including white, brown, and rice blends.

Here’s the “recipe”:

1) Make the rice.
2) Roughly chop an onion and sauté in a little oil.
3) Add ground meat and cook until no longer pink.
4) Season with salt and pepper or whatever you want.
5) Add the leafy greens and cook until wilted.
6) Serve. Put some rice in your bowl and top with meat mixture.
