This is my new favorite lunch. It includes so many foods that are good for you and is so delicious. We literally have been eating this salad three times a week.
The salad includes leafy greens (I often combine spring mix and arugula), smoked salmon, avocado, pumpkin seeds (pepitas), feta, and homemade lemon vinaigrette.
I know you don’t need instructions for making a salad, but I have a specific method that works well for me. This method is for making two salads.
1) In a large bowl, make the vinaigrette. Squeeze half a lemon, add a dollop of whole grain Dijon mustard, salt and pepper, Whisk, then add olive oil and whisk until emulsified. I make my vinaigrettes acid-heavy, oil-light.
2) Add the greens to the bowl with the vinaigrette, add salt and pepper (yes, to the greens), and toss to cover all the greens with dressing.
3) Divide the dressed greens between two bowls, then add the smoked salmon, avocado (half and avocado per salad), pumpkin seeds, and feta.
